- 1Wash and cut the pineapple, green mango, cucumber and jicama into bite-size pieces.
- 2Lightly toast the dough fritter and tofu puffs until crisp, then cut into small pieces.
- 3Mix the tamarind, dark sugar, fermented soybean paste, soy sauce and chopped chili into a thick, glossy dark sauce.
- 4Put all the fruit, vegetables, dough fritter and tofu puffs into a large bowl.
- 5Pour over the sauce and toss thoroughly so every piece is coated.
- 6Scatter with crushed peanuts and toasted sesame and serve at once.
