🧺 Ingredients
- Vietnamese rice paper8 sheets
- Thin rice vermicelli100g
- Five-spice tofu100g · Swap: pan-fried firm tofu
- Lettuce4 leaves
- Carrot1
- Cucumber1
- Mint leaves1 handful
- Cilantro1 handful
- Peanut butter2 tbsp
- Sweet bean sauce2 tbsp · Swap: vegetarian hoisin sauce
👩🍳 Steps
- 1Cook the vermicelli per the package, rinse in cold water and drain; slice and lightly fry the tofu; julienne the carrot and cucumber.
- 2Dip one sheet of rice paper briefly in warm water until soft and lay it flat on a board.
- 3On the lower third of the sheet, layer lettuce, vermicelli, tofu, carrot, cucumber and herbs.
- 4Fold the bottom up over the filling, fold in both sides, then roll up tightly from the bottom.
- 5Thin the peanut butter and sweet bean sauce with a little warm water into a dip and serve with the rolls.
