- Red lentils (masoor dal)200g
- Coconut milk200ml

👩🍳 Steps
- 1Rinse the red lentils and simmer with water, turmeric and pandan until soft, about 15 minutes.
- 2Add coconut milk and salt and simmer gently 5 minutes until smooth, avoiding a hard boil that splits the coconut milk.
- 3In another pan, heat coconut oil and crackle mustard seeds with the dried red chilies.
- 4Add sliced onion, garlic and curry leaves and fry until golden and fragrant.
- 5Stir in the curry powder briefly, then pour the whole tempering into the lentil pot.
- 6Stir gently and simmer 2 more minutes to marry the coconut and spice.
