  1. 1Soak rice, urad dal and fenugreek separately for 4 hours, grind together into a fine batter, salt it, and ferment 8-12 hours in a warm place until bubbly.
  2. 2Steam the potatoes, peel, and mash coarsely.
  3. 3Heat oil, crackle mustard seeds and curry leaves, soften sliced onion, ginger and green chili, then add turmeric and salt.
  4. 4Fold in the mashed potato to make the masala filling and set aside.
  5. 5Brush a flat pan with oil, pour a ladle of batter and spread from the center outward into a thin crepe; cook until the edges crisp.
  6. 6Place potato filling on the crepe, roll or fold, and serve hot with coconut chutney.
