🧺 Ingredients

  • Besan (chickpea flour)200g
  • Plain yogurt or lemon juice2 tbsp
  • Ginger-green chili paste1 tsp · Swap: ginger paste
  • Turmeric powderhalf tsp
  • Baking soda or eno1 tsp
  • Sugar1 tsp
  • Mustard seeds1 tsp
  • Curry leaves1 small handful · Swap: omit
  • Green chilies2 · Swap: omit
  • Grated coconut and cilantroa little
  • Vegetable oil2 tbsp
  • Saltto taste

👩‍🍳 Steps

  1. 1Whisk besan with water, yogurt, ginger-chili paste, turmeric, sugar and salt into a smooth batter and rest 10 minutes.
  2. 2Bring a steamer to the boil and grease a steaming tray.
  3. 3Just before steaming, stir in the baking soda until the batter froths and turns fluffy, then pour it into the tray at once.
  4. 4Steam on medium-high for 12-15 minutes until a toothpick comes out clean; cool, then cut into diamonds.
  5. 5Heat oil and crackle mustard seeds, curry leaves and green chilies, adding a little water and sugar to make a tempering.
  6. 6Drizzle the tempering evenly over the cakes and finish with grated coconut and cilantro.
