- Potatoes500g
- Olive oil3 tbsp
- Tomatoes2 · Swap: 2 tbsp tomato paste
- Smoked paprika1 tsp
- Chili powderhalf tsp
- Garlic2 cloves
- Red wine vinegar1 tsp

- 1Peel and cut the potatoes into 3 cm cubes, parboil in cold water for 8 minutes until half done, then drain.
- 2Toss the potatoes with a little oil and salt and roast at 200C or pan-fry until golden and crisp.
- 3In another pan, fry the minced garlic in olive oil, then briefly toast the smoked paprika and chili powder.
- 4Add the diced tomato and red wine vinegar and simmer into a thick brava sauce; season with salt.
