I bought a pack of plant-based patties at the supermarket, and when I pan-fried them at home they came out dry and tough. Felt like a waste of money.

Plant-based patties have a different water and fat ratio than real meat, so cooking them too hot for too long really does dry them out. I'd suggest medium heat, searing each side for 2-3 minutes to lock in the surface, and not pressing down repeatedly to squeeze out juices the way you might with a real steak — plant-based meat doesn't have that much moisture to begin with, so pressing it out just leaves you with less. Let it rest for 1-2 minutes after cooking before cutting into it — the texture will be better. When buying, check the ingredient list — don't go for products with too low a fat content (coconut oil/canola oil); patties that are too 'low-fat' tend to come out dry and tough. If it's frozen, thaw it in the fridge first rather than cooking it straight from frozen — it'll heat more evenly that way. When picking a brand, try a small pack first to test the flavor — there's actually quite a bit of variation between brands.
