Rehydrate dried shiitake in warm water (not hot — that ruins the flavor) with a small pinch of sugar. Once softened, trim off the tough stem base. If the soaking liquid settles clear, save it for a soup base — it's wonderfully savory. For fresh mushrooms (button mushrooms, king oyster mushrooms), don't rinse them under running water for too long — they soak up water and turn soggy while still holding onto the earthy smell. It's better to wipe them with a damp cloth, or rinse quickly and drain immediately. Dry-frying them over high heat to cook off the moisture before seasoning also noticeably cuts down on that musty smell. Blanching some mushrooms (like oyster mushrooms and shiitake) for about 30 seconds can also remove some of the earthiness and astringency.
