This is a really common thing during the transition period, and the biggest cause is usually just not eating enough total calories or carbs. A lot of people's first instinct when going vegetarian is 'eat more vegetables,' which ends up crowding out staple foods and soy products — the main energy sources — leading to unstable blood sugar and afternoon drowsiness. Check whether you're actually getting enough staple food (rice/noodles/whole grains/starchy vegetables) plus protein (soy products/eggs) at every meal, rather than a plate that's all leafy greens. Also, suddenly increasing dietary fiber by a lot can make you feel heavy and tired while your gut bacteria adjust — that usually settles down in 2-4 weeks. If there's no improvement after a month, it's safer to get a CBC and ferritin checked.

That was exactly my situation — I wasn't eating enough staple food, I kept thinking more vegetables was healthier, and ended up with clearly insufficient carbs every day, feeling foggy all the time. I later made a point of adding sweet potatoes, brown rice, and similar foods to every meal, in bigger portions than before, and within about a week the afternoon drowsiness noticeably improved and my productivity went back to normal. Just sharing for reference — I feel like this issue is honestly pretty easy to overlook.
