It helps to do a full lap around the buffet first to see what's on offer before filling your plate, so you don't stuff yourself in the first round only to discover something you'd rather have had later. A good combo to aim for: a starch (rice, noodles, or potatoes), plus protein (tofu, nuts, or egg if you eat it), plus a generous amount of vegetables, plus a moderate amount of fruit — and save the high-calorie, low-fullness desserts and drinks for the end, just a small taste. Some buffets tend to fry their tofu dishes (fried tofu, tempura), so if you're watching your fat intake, balance those out with some steamed or lightly dressed vegetable dishes. It also helps to ask at the front desk beforehand whether there's a dedicated vegetarian section or dishes — a lot of the bigger buffets will point this out if you ask.
