Tofu Mold

Tofu Mold

A tofu mold is a dedicated tool for shaping and pressing homemade tofu, typically fitted with a mesh or cloth lining that helps drain the curds and press them into a firm block that can be sliced.

Characteristics

One of the key steps in making tofu at home is pressing the curdled soy milk into a mold to drain and set. The mesh structure in the mold's base and walls lets excess water continually seep out, and the pressing time and weight used directly determine how firm and how much moisture the finished tofu retains.

How to Choose

Look for a mold made of food-grade material (stainless steel or food-grade plastic) with appropriately sized mesh holes — too large and curds will leak through, too fine and drainage will be poor. A mold with a press plate and handles makes it easier to apply even pressure.

How to Use

Line the mold with clean cheesecloth before use, pour in the curdled soy milk, wrap it up in the cloth, and weigh it down with something heavy. Firm tofu needs about 20–30 minutes of pressing with a heavier weight, while soft tofu needs a shorter pressing time and a lighter weight to preserve its delicate texture.

Care

Clean the mesh parts of the mold thoroughly after each use to prevent leftover soy pulp from fermenting and causing odors. Replace the cheesecloth each time, or boil it thoroughly to sanitize before reusing it. Dry the mold before storing it to prevent bacteria from growing in a damp environment.

Tips

If you don't have a dedicated tofu mold, a perforated plastic container or a steamer basket can work as a substitute — lined with cheesecloth, it can still handle basic pressing and shaping. It's a simple, practical workaround for the home cook.
