How It Works

Conventional high-heat cooking often heats food unevenly, overcooking the outside before the inside is done. Sous vide solves this by holding the water bath at a precise, constant temperature (typically 55–85°C / 131–185°F) over an extended time, so the ingredient cooks evenly from surface to center while retaining maximum moisture, color, and flavor.

Steps

  1. Season the ingredient (king oyster mushrooms, tofu, and tempeh all work well) and seal it in a bag, pressing out as much air as possible. 2. Set the sous vide machine to the target water temperature — vegetarian ingredients generally fall in the 60–75°C (140–167°F) range. 3. Set the cooking time based on the ingredient's thickness and type, typically anywhere from 30 minutes to 2 hours. 4. After removing it from the bath, sear the surface quickly to build color and aroma — the browning that low-temperature cooking alone can't produce.

To remove air without a vacuum sealer, use the water displacement method: slowly lower the open bag into water and let the water pressure push the air out before sealing.
